Land Vegetables 

Land vegetables help keep us in harmony with the seasons and are rich in vitamins and minerals. 

They give us sweetness, fiber, chlorophyll, colors, and crunch! 

Round vegetables (like onions, cabbages and pumpkin)  provide us with a natural source of sweetness and balance. 

Root vegetables (like daikon, parsnips and carrots) give us minerals, stability, and strength.  

And leafy vegetables (like kale, watercress and pak choy) are an important source of fiber, chlorophyll and iron.

When prepared well and with variety, vegetables also help to give us more even blood sugar levels.   

As much as possible, vegetables should be fresh and seasonal.
