Beans and bean products

 

Beans and bean products give us a gradual, consistent energy.

Beans are an excellent source of protein, complex carbohydrates, and vitamins and minerals, especially calcium.

They are associated with a lower incidence of degenerative illnesses, in part because vegetable-based proteins are low in fat and cholesterol.

When eaten with grains, beans give us a complete essential amino acid (protein) profile.

 

 

 

 

 

 

Tofu, tempeh and natto are soybean products traditional to the Far East. It is important to vary the beans we eat and not to eat soy-based products in excess (or drink too much soymilk!).

It is also worthwhile learning how to prepare these ingredients well in order to reap their benefits. Otherwise, they can actually weaken the body’s vitality.

Transitioning from animal-based to vegetable-based proteins takes time and is best done gradually.
